Soja sí o no!?

Hola!! Qué tal el fin de semana?? Espero que lo hayáis disfrutado muchísimo!!!

Haciéndome hoy la comida me acordé de un comentario que me ha hecho Victoria en el post de la recomendación número 4. Me he hecho pasta con tofu. El tofu es un alimento que se obtiene coagulando la leche de soja, generalmente, con una sal. La palabra tofu significa «carne sin hueso» en japonés , así que ya os podéis imaginar que tiene bastantes proteínas. También tiene mucho calcio, hierro y zinc. Es uno de los productos derivados de la soja con más isoflavonas, que nos ayudan a prevenir enfermedades coronarias, osteoporosis o los síntomas de la menopausia. Eso si, es importante que no sea transgénica.

Tiene un sabor bastante neutro y la textura se parece al queso fresco. Se puede comprar fresco o preparado. El fresco lo utilizo en sopas porque es «soso»  y, si lo utilizo en otro tipo de platos para darle más sabor, le pongo siempre alguna salsa o lo compro ya preparado, como el de hoy. Es de la marca Natursoy. Cuesta más o menos 3 € y la cantidad que hay en el paquete cunde bastante y está bueníííísimo!!

Y os preguntaréis qué tiene que ver esto con Victoria. Pues bien, Victoria me preguntaba por la soja porque le han dicho que si no es fermentada no es buena en absoluto y también me decía que cómo podía poner como propósito  comer carne una vez al día.

Vamos con la soja si fermentada o no fermentada.

La soja es una legumbre y cuando se fermenta se consiguen varias cosas como, por ejemplo, mejorar su sabor, también la desaparición de sustancias tóxicas y factores antinutritivos que impiden que se absorban nutrientes. Además, hay estudios que dicen que  los microorganismos causantes de la fermentación generan vitamina B12. Algunos productos fermentados son el tempheh, miso o tamari.

Con la soja en grano o los productos no fermentados como la leche de soja o el tofu también hay estudios que dicen que puede cambiar el metabolismo del yodo. Esto seguro que lo saben bien los hipotiroideos porque no deberían tomar soja. Pero esto no ocurre sólo con la soja sino también con el cacahuete o la col y algún alimento más, pero, tranquilidad, que no cunda el pánico, las personas que no tienen hipotiroidismo la pueden tomar  porque todo eso desaparece cuando la cocinamos.

Si cocinamos la soja no tenemos de qué preocuparnos. También tiene otras sustancias ( como las legumbres en general ) que podrían retrasar el crecimiento, entre otras cosas, pero volvemos a lo mismo, si está bien cocinada no pasa nada.  Ahora, tampoco tenemos que abusar de la soja ni  de sus productos derivados.

Por cierto, que por todo lo dicho tampoco se recomienda que la leche de soja sea la «leche» de los niños  como sustitución de la leche de vaca. Pienso que es mejor la de almendras.

Respecto a lo que me dice de la  carne.

A ver, vaya por delante que yo no como carne. Ahora, no estoy en contra de ningún alimento. Ninguno es milagroso ni todo lo contrario. Todo depende del uso y del abuso. A mí, personalmente, comer una vez carne al día todos los días de la semana, me parece mucho, pero el post de la recomendación número 4 va hacia l@s que la comen más de una vez al día porque conozco a much@s. Lo ideal es comer carne dos días a la semana, máximo 3, pero si tú le dices eso a alguien que la come todos los días de la semana,  pues ni se plantea bajar la cantidad de carne que consume. No creo en los cambios drásticos. Yo lo he comprobado por mí misma, lo mejor es ir poco a poco porque piano piano se va lontano.

Hoy también quería contestar a Sonia, pero este post me ha salido un poco largo ¿no? Me pide que cuente cómo prevenir los síntomas de esos días taaaaan femeninos. En el próximo post hablaremos de cómo lo hago yo.

    Gracias Patricia por hacer este post, me has resuelto varias dudas que tenía con la soja ya que hay quien está en contra y además, al tener isoflavonas es considerado un alimento más para la mujer.
    A mí me gusta, las hamburguesas de Natursoy están buenísimas pero con lo que muero es con el yogur de la marca Sojade al que le añado varias cucharaditas de miel eco y está para chuparse los dedos!
    Normalmente el tofu suelo comprarlo natural pero probaré los de sabores que dices como el que pones en la foto que al wok debe estar delicioso y esa receta tan fácil que pones seguro que me encanta así que la probaré.
    Yo tampoco como carne, pienso que nuestro sistema digestivo no está adaptado para ello y además, es el origen de muchas enfermedades.

    Hola Patricia! Qué opinas acerca de la relación de la soja con cierto tipo de cáncer de mama? Sería mejor no tomarla para prevenir su aparición en el caso de que genéricamente estemos predispuestas? Gracias!

Hola Patricia, yo solía tomar soja pero uno de los endocrinos que he visitado no es partidario de la soja, dice que con el aumento del cancer de mama han investigado la soja y la levadura y ninguna de las dos las recomiendan, imagino que es como todo dependiendo con quien hables, yo la levadura intento no consumirla (busco masa madre) porque si te fijas todo tiene levadura, muchas gracias por tus comentarios como siempre son interesantísimos, adios guapa, por cierto tomo el agua de limón todas las mañanas y me va fenomenal, también he empezado a consumir el mijo haciendo hamburguesas con verdura y muy buenas, voy otra vez a volver a leer tu libro para coger mas ideas sanas, besos enormes

    Leyendo el blog y los comentarios me complace mucho contarles brevemente mi experiencia con la soja.
    Decírles que soy vegetariana desde hace más de 20 años y consumidora habitual de soja en todas sus variantes. Les animo pues a consumirla guisada, la verde está buenísima, fermentada o Tofu, bebida, con textura de yogourt incluso la hay en barritas energéticas y por supuesto el Seitán no falta en mi nevera. Sin más, pasen un buén dia y coman soja que está requetebuena.

    ya había oido lo de la Soja en los niños y me preocupa mucho porque mi hijo es aplv (entre otros muchos alimentos básicos que le producen reacciones anafilácticas) y consume soja a diario (en bebida o yogur). Dices que es mejor la de almedras pero por desgracia también padece alergia a los frutos secos :-(, ¿qué otra opción me recomiendas?.

  11. Hola Patricia, te he descubierto hace poco y en los cuatro días que llevo comiendo como me estás enseñando, he notado un cambio tremendo. Me he deshinchado por completo. Tengo aquí tu libro y estoy deseando empezar a leerlo.
    Me acabo de quedar un poco preocupada porque soy hipotiroidea y no tenía ni idea de lo de la soja (ayer cené hamburguesa de tofu). Entonces los hipotiroideos tampoco la podemos tomar cocinada?¿y la col tampoco?¿y entonces el brocoli?¿y la coliflor? ayyss me han entrado unas dudas tremendas porque nunca había tenido en cuenta el hipotiroidismo para alimentarme.   12. Hola Patricia!!hoy he descubierto tu blog en Internet y me ha encantado! Desde hace unas semanas he empezado a preocuparme por lo que como y cómo me sienta lo que como.(cosa no habitual en gente joven de mi edad).
    Siempre he tenido sobrepeso, y después de varias dietas, he conseguido estar en mi peso! Aún así, hay días que no me siento bien y estoy super hinchada, al día siguiente vuelvo a estar bien, a los dos días no me sirve el pantalon… Por eso decidí empezar a comer sano y bien, sin contar calorías, simplemente intentando dar a mi cuerpo lo que necesita!y coincidiendo casi con esto descubro tu blog! Estoy encantadísima y será sin dudas mi blog de cabecera!

    Ho la Patricia. Creo que la recomendación de comer carne 3 veces por semana es absolutamente de proporcionada y alejada de cualquier dieta que se considere sana. Existen muchos estudios que prueban la relación del consumo de carne con algunos tipos de cáncer como el de mama, Colombia, páncreas, vejiga y próstata. Sin ir más lejos hoy leía en un diario italiano al reconocido oncólogo Umberto Veronesi, decir que quien se alimenta d productos animales corre un 30% más de riesgo de contraer dichos tumores además de enfermedades cardiovasculares, metabólicas, diabetes y obesidad. Continuaba diciendo que son muchos los médicos y científicos que están al corriente de dichos riesgos pero no pueden publicarlo en las revistas oportunas por tener las manos atadas a causa de la presión de las grandes multinacionales farmacéuticas. Solo en USA cada enfermo de cáncer hace ganar unos 250.000§ a las empresas farmacéuticas. Es por tanto normal que dicha desinformación se haga a posta para primero enfermarnos y luego curarnos. Y para terminar, decir que el consumo total de proteínas al día no debería superar el 15% y todos sabemos que se llega hasta triplicar. Decir pues que lo ideal seria comer carne dos o hasta tres veces por semana es dar una información equivocada más si como se supone, además de las proteínas de la carne se ingieren otras de origen animal como el pescado, lácteos o huevos. Obtenemos una bomba proteica muy alejada de las recomendaciones de la tan famosa y tradicional dieta mediterránea, ojo, la de los habitantes de la Isla de Creta. Gracias. Un saludo.     1. Hola! Si hay muchos estudios que lo certifican , pero para lo que tú dices, no solamente influye el hecho de comer carne sino de cómo se prepara y con qué se acompaña,Si se bebe o no se bebe agua, si se hace o no deporte. Un besito!!

Patricia, mil gracias por tus consejos, desde que te seguimos, en casa nos hemos vuelto «los raritos» jejejej ya me entiendes, pero no nos importa, es la primera vez que mi marido y yo hemos conseguido bajar nuestro colesterol, tenemos mala herencia y siempre lo hemos tenido mal. Yo tuve una temporada en que consumía mucha soja pero me advirtieron que no era bueno tomar demasiada soja, de hecho, conozco el caso de de un familiar que ha sufrido un cáncer de pecho y se la han prohibido así que le he cogido un poco de miedo…. y eso que me gusta, ¿qué hay de verdad en todo esto?

    1. Hola!! Ya, está claro. Aún así ningún ningún alimento es milagroso. La soja siempre ecológica. Hay que fijarse al comprarla.

    Leyendo tu comentario sobre la leche de soja para los niños solamente dar mi opinión que para mí es mucho mejor la leche de arroz. Mis hijos la han tomado desde pequeños y a nivel nutricional y digestivo, es la mejor, después de haber probado todas las demás.. (pues la de soja ó almendras a veces es un poco fuerte para su digestión)

    Soy Mónica, te escribo pero no referente a ningún post. Te sigo desde que sacaste el libro y me encanta.
    Te escribo porque quiero pedirte ayuda y consejo. Tengo muchos problemas de estómago desde hace mucho tiempo. Tengo gastritis, hernia de hiato, intolerancia al glutén y dispepsia. Tengo una alimentación muy limitada, casi todo me sienta fatal, pero sobre todo, es el estómago y el abdomen, solamente con un vaso de agua se me pone que parece que estoy embarazada y me molesta muchísimo. Por esto es por lo que te escribo, que puedo tomar para esa flatulencia y esos gases. Suelo subir un kg o bajarlo de un día para otro. Mido 1,60 y peso unos 40 kg.
    Por las noches, además me da mucha ansiedad y como cosas que no debo, por lo que termino mucho peor.
    He probado con miles de especialistas digestivos, médicos de medicina interna, homeópatas y nada me hace mejorar esos síntomas de inflamación, dispepsia y flatulencia.
    ¿Qué puedo hacer?

    La verdad que me encanta leer tu blog y encuentro muy utiles tus consejos y propuestas de recetas. Tambien he adquirido recientemente tu libro asi que en cuanto llegue el fin de semana me pongo a leerlo:-)

    Justamente hoy hablaba con mi pareja de uno de los temas que comentas: la leche de soja. Nosotros llevamos bastante tiempo bebiendo leche de soja. Estamos preocupados porque adicionalmente hemos leido otro articulo con un estudio en el que no se recomienda beberla, por lo que nos lo estamos replanteando y seguramente la cambiemos por otra. Pensabamos que al ser la marca que utilizamos no proveniente de soja transgenica no habia problema.

    Mencionas en tu post la de almendras asi que la probaremos como alternativa 🙂

    Mi hijo tiene intolerancia a la lactosa e hipercolesterolemia familiar heterocigota, por lo que lleva más de un año tomando leche de soja a diario.

    He intentado introducir la de almendras, pero no le gusta, y la de avena sí. Y tengo la de arroz en casa par que pruebe y ya veremos.

    Puedes ayudarme con tus recomendaciones? Es mejor la de avena a diario? O alternar soja y avena? O incluir leche sin lactosa y 0%?

  23. Hola Patricia, ¿cuando haces referencia a la »leche de soja» a qué te refieres? La leche es la secreción de las glándulas mamarias de un mamífero. La soja creo que no tiene mamas, ¿verdad? Los términos leche de soja, avena, almendra y demás… nunca los verás en los alimentos porque NO ES LECHE, es bebida de…
    Esto puede dar a pensar que esas bebidas pueden sustituir a la leche y nunca podrá una bebida de soja sustituir a la leche convencional por su contenido en proteína, no solo la cantidad sino la mayor biodisponibilidad que tienen las proteínas animales frente a las vegetales.

    1. Hola guapa, te doy la razón. Es bebida de soja. Tampoco pretendemos con este post dar a pensar que esas bebidas pueden sustituir a la leche.Ni a ningún otro alimento. Aunque para los que no podemos tomar leche de vaca no nos queda otra y tampoco por eso tenemos deficiencias nutricionales. La leche tiene un 3% de proteína, es decir, 3 gramos cada 100ml , y su valor biológico no es del 100% porque tiene poca metionina y cistina, histidina y triptófano. No tiene vitamina C y tiene poco hierro, por eso muchas se suplementan. Su caseína y grasas saturadas ayudan a que aumente el nivel de colesterol. La bebida de soja, como tú bien dices, tiene menos grasa, menos calorías, más hierro, menos calcio y menos vitamina B12 que la leche. Aunque este tipo de bebidas vegetales son más recomendables en caso de dermatitis, alergias, eccemas, colesterol, cálculos biliares en ningún caso se dice en el post que sean sustitutorias ni una mejor que otra.     Como persona en proceso de transición a comer menos carne (cada vez la consumo menos porque a su vez cada vez le añaden más química) estoy iniciándome en la realización de recetas con tofu, ya que lo veo un alimento muy versátil. Lo he cocinado en varias ocasiones con pasta y está delicioso, pero claro, debo restringir un poco el consumo de pasta porque me sobran unos 5 kilitos!! Por ello me gustaría saber qué tipo de pasta sueles consumir.

    He empezado a leer tu libro y me parece muy interesante.
    Quiero empezar a cuidar mi alimentacion pero soy hipotiroidea me tomo eutirox 88 es cronico. Y he estado leyendo que hay comidas que no son buenas como la soja, la col, etc, la quinoa no me ha quedado cloro,,,,,, nunca me he alimentado teniendo en cuenta mi problema.
    Me encantaria que me dieses pautas y por donde empezar a tomar buenos habitos.
    Te comento un poco mi rutina, trabajo de 8 a 3;30 o cuatro.
    Hago batuka 2 dias a la semana, y camino uno o dos dias media hora,
    Ultimamente mi alimentacion es un desastre, estoy en un proceso personal que me hace tener ansiedad y estres con lo que ello hace; caida pelo, piel seca, pequeñita hemorroide, un pelin de pequeñita sensacion de taquicardia,,,,,, vamos q los nervios son un mal enemigo.
    Mi peso actual 71 y altura 1’67 Complexion media.
    Quedo a la espera ilusionada de empezar a aprender a alimentarme y saber como el que y donde comprar,
