FELIZ AÑO NUEVO!!!!!!!

Bueno antes de que terminen las fiestas y comilonas ( lo mío este año ha sido un no parar!!!! )  os paso la receta de la empanada que he puesto el otro día en mi instagram. Luego,  como dice mi madre » ya vendrán los lloros » pero mira!! Está taaaaaaaan buena que no podéis dejar de hacerla!

Es riquísima y muy facil de hacer. Se trata de la empanada de bacalao con pasas. Un clásico en mi familia.
Esta receta es mi favorita.  La masa es exquisita y el relleno….. no tengo palabras. Para quien no le guste el bacalao puede cambiarlo por lo que más le guste ( pollo, huevo, setas con zanahoria.. ) Aunque de verdad que os animo a que la probéis. Os guste o no.,… No os arrepentiréis.

Ahí va. Coged papel y boli porque es bien fácil de hacer.

Ingredientes para la masa:

• 450 g de harina aproximadamente. ( yo la hice de espelta )
• 1 vaso mediano de cerveza
• 1 vaso pequeño de aceite de oliva
• 1 huevo
• Un poco de sal

Ingredientes para el relleno:

• Bacalao desalado o descongelado ( unos tres buenos trozos )
• 4 cebollas pequeñas ( 3 si son grandes )
• Un puñado de uvas pasas
• Un poco de pimentón dulce
• Un poco de aceite de oliva

Preparación:

Empezaremos por preparar la masa que se reposará solo el tiempo que tardemos en hacer el relleno.

La masa se hace mezclando todos los ingredientes : ponemos la harina en un recipiente profundo con un agujero en el medio, vertemos el vaso de cerveza, el huevo batido el aceite y la sal removemos con cuidado y empezamos a amasar hasta que quede manejable y no se pegue ( le añadiremos un poco más de harina en función de ello ). Dejamos reposar.

En una sartén grande ponemos al fuego el aceite y cuando esté un poco caliente echamos la cebolla cortada y dejamos pochar. Cuando esté casi hecha , añadimos las pasas y un poco de sal. Una vez pochada del todo se retira del fuego y se deja enfriar un poco, antes de ponerle una cucharada de pimentón y , al final, el bacalao crudo ( tranquilos que se cocina en el horno ) cortado en trozos pequeños.

Luego dividimos la masa en dos . Un parte la extendemos en la bandeja de horno que previamente hemos forrado con papel de cocina o engrasado con un poco de aceite. Sobre ella echaremos con cuidado y muy extendida, la mezcla de la empanada para, después, tapar con la otra mitad de la masa.

Pintamos la superficie con un huevo batido y pinchamos en varios sitios con un tenedor ( yo le hago un pequeño agujero yo en el medio ) .
La meteos en el horno precalentado a 200 grados durante media hora.

Ya esta!!! No me digáis que no es fácil!

    Hola, ¿sabes algo de los efectos de mezclar harinas, por muy saludables que sean, con proteína de pescado o animal? siempre leo que no son compatibles e intento no mezclar, pero vivo en Vigo desde hace unos 8 años y ¿cómo me resisto a las empanadas gallegas, sobre todo a las de bacalao? me las como siempre con la creencia de que no es saludable.
